Cooking for an old friend

Yesterday, one of our friends from Murray State came to Evansville for a visit.  We had a great time hanging around and playing many games on the Wii (most of which I lost in...).  The day still started with 5K training, but from there went to a fun day of shopping and cooking.

Schnucks ALWAYS has the best grocery selection in Evansville.  We took a trip there to pick up lunch and dinner cooking food!  Lunch was pretty light, but light doesn't have to mean tasteless!  We started with chips and Mango-Avocado Salsa then had a fulfilling Blackened Chicken-Mozzarella Sandwich with Citrus infused Sweet Tea.

Dinner started early by marinated some Butterfly Pork Chops.  The marinade was a mixture of Pomegranate Juice, worcestershire sauce, white wine vinegar, red pepper flakes, salt and pepper.  After sitting for about two hours they went on the grill and were glazed with a homemade Pomegranate-Barbeque Sauce.  On top of our pork chops was an herb butter (butter, rosemary, oregano, and sugar).  For a side we had Basil-Herb Couscous.

After relaxing and playing some riveting games of Wheel of Fortune we enjoyed some dessert, a Bourbon Chocolate Tart.  If you would like the recipe just let me know!
